It is important to remember that nowadays more than half restaurant do not prepare the food themselves and serve dishes stemming from industrial préparations and limit their job to unfreeze meals. Very centrally located in Troyes, we had two classic 'old french cousine' meat dishes (one veal, one beef): good quality, attention to details, meat well cooked (the beed was perfectly pink), flavorful ingredients. Sorry but having spent the last 25 years visiting and eating in restaurants all over France this was not our greatest experience. The service from the young waiter was excellent, the wine excellent and fairly priced but the food underwhelming. Centrally located, the restaurant is well worth visiting. I personally found the service very good, with "the boss" reminding me of an older Andrew Marr. We were four of us dining at this resto last weekend. As it was Saturday night, no set menus were available.
