We ate at the Walliser Stube twice during a five night stay at the Fairmont, and there is a reason for it, the food is excellent! The restaurant has friendly helpful staff and the most amazing fondue meal ever. Our meal started with cheese fondue with truffle and pieces of chunky bread, then a choice of Bison or beef and steamed veges. Absolutely yum, then Chocolate fondue with fruit and marshmallows. I say to everyone have this and you will not be disappointed.

This restaurant is pricy, but worth it. The service is excellent and the quality of the food is very high. Despite the fact that we were staying at the hotel at the height of the holiday season, we were served promptly and attentively. We had a great evening.

This was the second time we have eaten here while staying at the Chateau. The previous occasion was about two years ago and the experience was about the same. I am very allergic to seafood and allergic to pork and was dying to eat a cheese fondue. They could have said "sorry, no can do" but the waiter and the chef were SUPER and even used the bread they were sure hadn't come from any of the other restaurants. Very, very caring and special.

We came for the fondue and other than that ate a soup and salad. It was all good, but all pretty simple dishes as well. Good beer and wine selection. Lots of Canadian wine on the menu which was nice to see. The service was great, our server was very helpful with our food and drink selection.

We had Thanksgiving dinner 2014 here at the Walliser Stube. It is an incredible experience. My 17 year old ordered this bison "fondue" and actually was able to cook his own meat at the table by dipping it into a boiling broth fondue pot! Quite an experience.
