This is the right way to do young roast lamb: in a wood-fired clay oven, slow and juicy. The skin is crispy, garlicky and salty, the meat tender and moist and pale. It's how it used to be done in the olden days, and I'm happy to report they still follow the old tradition here at the Panadero in Sepúlveda.... More
