outstanding French-Japanese fusion in Tokyo

Hortensia is outstanding in the skill with which its dishes are prepared and served and in the imagination of the chef. While mainly French in conception and presentation, the ingredients are mainly Japanese and the sauces and combinations have a strong Japanese element. The fixed menu, which... read more

I’ve been to Hortensia with my family tonight. It was a tremendous sensorial experience with many different flavors and aromas combined. The menu is structured I such a way that you are asked to choose 4 alternatives among appetizers and main courses. You have many different alternatives, including a fantastic Chilled Foie Gras Variation. The service and wine list were... More

My wife and I had the menu, and the dishes were very original and delicious. The creative French cuisine here was presented with great panache. A main theme was the use of various creams, cream sauces, and an occasion foam. Sounds rich, but it worked perfectly. The flavors were expressive, refined, and tasty. Good textural contrasts as well. The service... More

This is a French restaurant with a Japanese touch. The menu has three categories -- appetizers, mains, and desserts -- and the diner can choose any four dishes, even four mains. We chose two appetizers, a main, and a dessert. The first appetizer was ‘zuwai’ crab and mushroom ravioli, prepared al dente, with a lobster cream sauce that was so... More

If you want a very fancy but genuine French cuisine, you must try this place. I read about it in the New York Times. I asked my Japanese friend to make a reservation for us. Don't worry the wait staff speaks English well. One chooses 4 items from the appetizers, main dishes and dessert. Coffee and tea are included. There... More
