高い、値段の割にすぐに帰される、ゆっくりできない、サービスが悪い などなど色々言われていますが、ここは「良いサービスを売っている店じゃない」という事をわかって来てほしいと思う。ここは「寿司に対する大将の熱意(信念)」を売る店であって、お客にヘイコラする店ではありません。大将の熱意に賛同できない人は行かなければいいだけ。 行く前にレビューで大将がどれだけ怖いか。を散々見てから行ったので、最初はとにかく緊張しまくりました。でも大将は厳しいけど本当に優しい人です。信念を貫き通す職人で、万人受けする事を希望していません。私は味も勿論の事、そういう大将の熱意にひかれました。 勿論、お弟子さん達はかなり罵声を浴びせられてました。でも、別にそれが大将が機嫌が悪いから憂さ晴らしに言っているだけ。とは思えません。お客の前で罵声を浴びせて。。。と文句を言う客もいますが、私はそれを見るのもこの店の意味かとも思います。次回行った時にお弟子さんがもうちょっと立派になっているかとか、成長を見るのが楽しみだったりします。あまりにも叱られていたお弟子さんが一人いたのですが、そのおかげか、顔をバッチリ覚えてしまいました(笑) 金額は料理そのものへの対価だけとは限りません。大将に賛同できず、尊敬できず、嫌な思いをすると言うなら行かないで良い。 連れてきた私の義理の兄と従兄弟(どちらもアメリカ人)が、お寿司のまともな食べ方を知らなかった(緊張して上手く食べられなかった)ので、私からしたら「せっかくの寿司を醤油に泳がせて!!あぁ!!」と気が気じゃなかったし、大将に「食べ方しらねぇ奴は帰れ!」とでも言われるのではないか、とビクビクしていました。でも、最初の1貫目を終えた後に「これはこうやって食べるんだ。」と大将自ら英語で二人に説明していただき、二人ともすっごく喜んでいました。私が「本当に失礼な事してすみません」と言うと「二人共俺が言ったらすぐに理解して次から失敗しなくなった。それが一番大事だ」と言ってくれました。私はそういう大将のお店には何度も通いたいと思います。 Just go with respect for the chef. If you are vegetarian and can't eat fish, don't go. If you just want to eat "good sushi", find another restaurant. It is all about the chef's craftsmanship.

It was indeed a privilege and a blessing to dine at Sukiyabashi Jiro. Every piece of sushi was made to perfection. The combination of the right proportion of rice to the thickness of each slice of fish created an explosion of flavors in my mouth. Stopped by without a preliminary booking. They say you have to book at least 3 months in advance. The place can be easily found, so tiny and does not even have a WC!
