Beige is a nothing colour but this classy establishment oozes colour and flavour. Just loved everything about the delicious food and the Sommelier has a great touch for pairing a glass of wine. This placed lived up to my expectations and I'd gladly return.

I'll be honest with you all that I hated my dining experience here. I don't recommend certain restaurants like this on Christmas when they put you into a set menu and that's all there is. Located above the Chanel shop in Ginza, this is quite a memorable place to eat. Traditional in that women receive menus without prices, and there is an exaggerated bowing and scraping, the food is nonetheless spectacular. Just had a wonderful experience at Beige. Service and food were in want for nothing. Food was fresh and flavours were well balanced. Staff were attentive without being intrusive and made helpful suggestions for my first time at this restaurant. Tip: save room for their chocolate dessert!

General Manager Laurent n his staffs are very nice and polite. .Atmosphere is good,fish and pigeon are good and fresh too. It is perhaps the best french restaurant in the world.

抱著滿心歡喜的期待,我一時也想不出要以什麼樣的心情來形容。下了飛機,飛快坐著特急趕來「銀座」(GINZA)就是為了這間米其林餐廳而來。 假日的「東京」(TOKYO)人潮相當洶湧,光是在地鐵站人就多到嚇人,非常容易鬼打牆,尤其對於提著大包小包行李的旅客更是困惑。首先必須找一處可以寄放行李的地方後,我們才再轉搭地鐵前往銀座。「銀座」媲美美國紐約的第五大道,最為著名的則是中央通街道,其貫穿一丁目至八丁目假日時幾乎全數封街,僅留四丁目開放車輛通行,而今日到訪的餐廳「Beige Alain Ducasse」則位在三丁目全球第一間位在時尚精品指標的CHANNEL大樓10樓內,能夠在此開業勢必擁有高明的地位與聲望,餐廳是以法式料理為主軸,由法國米其林名廚Alain Ducasse在亞洲的第一家分店。Beige Alain Ducasse Tokyo 而位在東京銀座的Beige Alain Ducasse Tokyo,則是Alain Ducasse 於2004年與最高級服裝品牌「香奈兒」和「Enterprise」合作而成立的。雙方都有著同樣的性質就是「樸質兼具優美」,Ducasse的精神則表現於料理和空間的細節。充分嚴選最佳的日本食材提供高雅的法國料理。 所有的內部均由香奈兒精品店的設計師彼得•馬里諾負責。他的設計思想,表在空間的藝術,陶瓷和水晶,當然還有所見的銀色、金色以及溫暖的木、銅與橡膠和漆器等豐富的元素並結合透歐洲、日本的傳統工藝以「簡單與優雅」設計概念為主題,設計出華麗而樸實的Salon。 挑一支午間白酒 今日餐前選擇了一支白酒,挑了一支法國勃根地馬貢區村莊級白酒「Thevenet 」這支是以100%Chardonnay釀製的一支白葡萄酒,在高級餐廳裡用餐,不點一支葡萄酒佐餐總感覺少了一點東西,不夠完美。而開這一支干甜白酒,在餐廳酒單的列價中屬於較為低廉,但仍高於市價許多,但是品嚐後才會知道其價值,儘管這裡有許多侍酒師,光是掛葡萄徽章的就約有三人。他告訴我,這支酒的香甜果味比較濃,很順口。 Thevenet & Fils Macon-Villages 2006 100% Chardonnay 就先來談談勃根地的馬貢產區。源自於在夏隆市南方55公里處的馬貢鎮,此區廣大,多丘陵,葡萄園也更加分散,藉著石灰岩底土以及覆蓋著黏土或是沖積土的表土,使這裡成為釀造白酒的家鄉。氣候稍暖,讓夏多內葡萄在馬貢內發展得相當好,夏多內白酒占總產量的九成,但屬於平易近人的類型,不適合久儲。 馬貢的分級有一點不同,Mâcon以及Mâcon-Villages而後者規定只能釀製白酒,都屬地方性AOC,而非村莊級AOC。要找品質較佳的白酒,必須選擇產自該區的五個村莊級法定產區:Viré-Cléssé,,Pouilly-Fuissé,Pouilly-Vinzelles,Pouilly-Loché以及Saint-Véran。其中以Pouilly-Fuissé最著名,酒質也最高。 「Thevenet」是馬貢村Viré-Cléssé區北邊的Quintaine區域所釀產的葡萄酒,這塊區域適合釀造濃厚型的夏多內葡萄酒,由於糖份高,有時會長些貴腐菌,因此能產生濃郁香氣。而Thevenet家族則善於釀製高成熟度的夏多內白酒。 釀酒師Jean Thevenet以及兒子Gautier喜歡以晚摘的方式來形塑自家的白酒,有時甚至會晚摘至一個月左右,這樣的方式又有點像刻意要讓他成為甜口的葡萄酒,就像Resling或是貴腐酒一樣。 為了使酒體豐郁,他們不以橡木桶方式陳釀而是以鋼桶釀製並同時也會部分以大型木槽發酵。他們相當重視冬季葡萄,其中有一些是90歲的老籐,Thevenet則讓它們是慢慢的發酵,以長時間低溫14度進行,常耗時約6個月以上,也可能超過一年,經過慢慢的窖藏後才會上市,然而大多數葡萄酒都是在一個月內發酵完成。 一如往常,在米其林餐廳內我仍要細細品味葡萄酒的美妙。先看一下色澤,這或許年份的關係色澤偏深成黃金糖一般清爽色澤,酒腿挺銳利光滑,僅管倒入些微混沌,但穩定厚植地仍是相當清晰美麗。 輕晃了一下,再聞了下氣味,感覺有鳳梨、水梨、醃漬水果蜜餞等等清香,相當迷人,尤其再多搖晃幾下之後,甜蜜氣味又不斷的連續散發。 口感屬於微甜但卻不是含糖的甜蜜也就是屬於甜味的干白酒,酒體微厚實,品嚐中可感受微澀而中強的酸,其尾韻產生些甜蜜,綿綿的很舒服。個人是相當滿意,是支不錯的法國勃根地白酒。搭配最後的甜點也不失美麗。 假日的午間套餐 早在一月中旬公布了2015年東京米其林餐廳之後,我即上網定了這間餐廳,尤其位在高處且於時尚指標的香奈爾大樓內更是吸引人,再者並非位在高級酒店,同樣也摒除了一些額外的稅收,減免了些負擔。就在網路書信往來,我直接點選了Menu B即是3道開味菜、一道魚料理、一道主餐、甜點以及飲品,當然還有小點心。 開味點心. 開味點心是多層次的風格小點,一款是菠菜加柳橙果搭精緻塔皮的小點心,但味道不錯。另一款則是芝麻葉佐白色酸奶醬以及魚子醬小塔,也很可口。 麵包. 餐前的麵包使用傳統法式麵包、全麥麵包以及一些一些的餐包,但有些可惜的是都是常溫甚至有些冷,有些可惜,不過奶油品質相當不錯。 開味菜1. Delicate broccoli soup,Wakasagi fritters 第一道開味菜是一道湯品,以分子料理的泡沫故作懸虛,並附上兩條以日本魚產西太公魚製作成的餅棍。尤其湯品的形式極像過去常喝到的卡布基諾濃湯之類的形式,但用湯匙挖後食用卻與眾不同,以細緻的手法與概念讓湯品擁有來自日本當季蒔蔬的精彩滋味,而湯製作濃郁厚實近似蒸蛋的方式,口感細緻,味道香美用餅棍沾著吃別有風味。 開味菜2. Seared saba fish, turnip and broccoli 因為點了支白酒,在料理方面多以魚肉海鮮為主,這道開味前菜就是以青花魚為主食的菜餚,除此之外點綴了當季的菠菜、蘿蔔、菠菜醬汁、帶著甜味的醬汁以及一些日本季節菜餚。青花魚經過炙烤難免呈現一些魚油香,但這樣的氣味對我來說是美味的,喝上一杯白葡萄酒,更是享受。 開味菜3.
