Jump on the 62 ferry at Landungsbrucken and travel up and down the Elbe with a cup of coffee or something stronger. It's a great (and cheap) way of seeing Hamburg from the river.
Like something out of a cold-war spy movie the Old Elbtunnel has an eery presence on Sundays when cars are not allowed through. Well worth seeing and a nice place to cool down on a hot day (not that it happens very often in Hamburg.)
A stroll around the different gardens here is a great way to clear your head in the middle of the city.
Also worth knowing is that it joins up to Alte Elbpark and this means that you can walk from downtown to the harbour through adjoining parks, arriving at Landungsbrucken with a great view over the harbour.
A picnic or a grill-party/barby in a big public park followed by a swim in the public outdoor pool or a beer in Schumacher's biergarten. An summer evening's concert at the Stadtpark is pretty special.
Where else can you sing karaoke with a live band on stage? Surreal. (I sang Dirty Deeds by AC/DC)
When you're done with the Reeperbahn but want to carry on partying walk down to the Auction Hall for breakfast and more live music from 5am and then start again at the Fischmarkt.
