We recently spent time in the Naples region of Italy Our stay at Oasi Olimpia just capped off our holiday break It has a wonderful ambience and the staff are just perfect. The cooking lessons are a treat and relaxing time by the pool makes it a holiday to do again.

I collaborated with Chef Carmen on a unique concept- instead of a normal class, I wanted to transform it into a cooking competition ala 'Iron Chef'. Although some of the logistics came down to the wire, Chef Carmen was always calm, cool and collected. She and her staff executed a flawless competition, keeping our ten teams on their toes through... More

My wife and I have visited Italy a number of times on vacation, mostly in and around Tuscany. This was our first "cooking school" vacation. We found out about it from some friends who had recently taken a class with Chef Carmen and raved about the experience. Let me first say that the hotel and its facilities (including the views)... After a few days in Florence with friends I headed solo to the Amalfi Coast for my cooking vacation. I was greeted at the train in Naples and from that point on my every need was taken care of by Carmen and the amazing staff at Oasi Olympia. The cooking classes were hands on and I learned so much about... More

My daughter, who just graduated from a two year Culinary school in the States, and I came to Italy to tour a cooking school in Florence. We decided to incorporate a trip to the Amalfi Coast to learn Italian cooking as well. We did a lot of research prior to coming and felt that Chef Carmen's program was a perfect... More
