The technique being used in Varaison's wines shows great skill. The wines are so different from other wines due to the way they're being vinted. That difference may not be appealing to other tasters, but my spouse and I are oenophiles who appreciate a well-crafted wine. Hate to say it, but the wines lack substance. The staff were fab and the old house is beautiful, which bumps this up a notch for a rating. We were given a very good lecture on wine enjoyed the tasting. She said that to smell wine, get the nose all the way into the glass. Ron West spend an hour with our group, and we learned so much about the chemistry of wines and how to properly consume them. It was a great experience. The wines are lovely, and we were happy to take some home.

I concur with the others that the wine steward did a fabulous job in education about wine, but the exceptional ism here is the added benefit of their knowledge of chemistry, gestation and olfaction.
