At the entrance of the old medina, in a former almond warehouse, l'Atelier Madada welcomes you under its stone arches. By small groups (8 persons maximum) and supervised by a professional team (a cook and a trilingual presenter) our hosts discover the secrets of Moroccan gastronomy and are initiated into the delights of one of the best cuisine in the world. In a friendly and casual atmosphere, those half-day workshops teach each participant how to prepare a full traditional meal that one can then easily reproduce at home.

Excellent surroundings and fun hosts with a good knowledge of Moroccan cooking make this a great day out. We learnt how to cook a chakchouka starter and chermoula-marinated sea bream tagine. My daughter and I have just had a great few days in Essaouira and the highlight was the cookery school. Moona and Alison were great and we both enjoyed both the class and eating our food for lunch. We enjoyed our cooking class- especially the visit to the spice market. The hosts were strict but also funny. Enjoyed the other people in the class, too.

A highlight of my recent trip yo Morocco was the cooking class at L'Atelier Madada. We did a fish tagine as well as soup and mint tea. The cookery course was well organised and the chef Moona was excellent and you could not take short cuts and that made all the difference. Alison also provided a great insight into Morrocan cooking and our guide to the spice market and was an excellent host.

I and my two children aged 8 and 10 attended the pastry cooking lesson. Very easy to find, close to Bab Saba. Would definitely recommend it as not only do you get good tips from chef Amina but Alison, the host can recommend where to purchase ingredients and tools that help make that perfect Moroccan cake or biscuit. A great day out, we had a fabulous time. Small groups with two great hostesses in Nuna and Alison. We learnt lots about not only Moroccan cooking but also Essaourias history and Moroccan culture. Highly recommended.

This cooking class exceeded all our expectations and more. The environment is very nice decorated, really spacious and well looked after.
