What an experience! First up ... a guided tour of the local market. Totally out of my "normal" Australian market. All manner of food offerings . frogs, dogs, beef, sheep, vegetables, herbs, chicken. We attended Tracey Lister's Hanoi Cooking Centre as part of our Intrepid tour and it was an excellent experience. The chefs were very friendly, demonstrating the preparation of a dish to completion, before we paired up to replicate the dish. We read reviews of several cooking schools looking for ones that would allow us to either do an all seafood or all vegetarian menu, and for ones with good reputations. Fantastic tour of street food, local market ... finishing with the best coffee I have ever had! A must for anybody who wants to break past the standard tourist food places....WONDERFUL!!!

Did a 4 hour Vietnamese street food class....great trip to market n chance to really look (n photograph) stalls, produce, vendors and LEARN about produce, which unguided walk through leaves one without, because so much is strange n new to westerners. After taking this class I now know how to be the perfect vietnamese wife. The mystery of how fish sauce is made and how papaya is skinned and cut was discovered. Residing in a typical Hanoi building, the cooking center will interest your 5 senses. Hanoi Cooking Centre offers a comprehensive introduction to Hanoi markets and cuisine. First we had absolutely delicious pho noodle soup (beef) in a small restaurant across the street from the Ha Noi food centre. It takes 8 hours to make broth every night from beef bones and brisket.
