We opted for the 2 night stay and I highly recommend this to really have the change to relax and visit quieter areas of the islands. Halong Bay can be over-rated - it is full of various tourist boat trips (and traps), and the weather can be surprisingly cold, wet, and foggy , but - given the right boat - it is a world class experience.
