We spent a week in Sepetember with Silvestro and the Awaiting Table staff at the Castle in Spongano! While the course was entitled Cooking with Herbs, it was far more than that! Silvestro has an encyclopedic knowlege of the food and wine of the Salento and is extremely adept at sharing that knowledge with his students. Each daily cooking session... More

We had a great time with Sylvestro and his team! Daisy was very attentive in helping me make arrangements before we arrived in Italy. We made pasta, chicken and some other dishes. We drank lots of wine, had great conversations and made some friends. The atmosphere is very comfortable and the class is for every skill level. Our class was... More

My time at The Awaiting Trip in Lecce, Italy, taught me how to cook tasty vegetable based meals without my usual salt laden seasonings. What I found most surprising after I returned home from eating healthy fresh meals daily at AWT, is that my usual carb and sugar cravings were absent, and I did not have the usual desire to... More

Thanks for the nice compliments and for the insider info on the weather in August, which IS warm, no question. The shoulder seasons are sought after for that reason, with winter being the best time for the food and wine, no question. We would love to have you back! Maybe to our Sicilan wine course, which will be our first... More

I recently had the privilege of spending 2 weeks in Lecce the highlight of which was a week at the Awaiting Table with the delightful Silvestro and his staff. Learning about the Salento, its food, its wines, its traditions was fascinating. Each day was an adventure starting with a discussion of what we wanted to eat, then the market to... More

Silvestro and his staff were both professional and fun to work with. My wife and I took a day course while in Lecce for a long weekend holiday. We were both very impressed with how knowledgeable Silvestro is. He taught us a lot in a short time about the cuisine of Puglia, and of Italy in general. There was even... More

'Edutainment'? That's a word that we haven't heard yet. Yes, a pity that found out about us right before you had to leave after years in Italy. And it was great that we just so happened to have the wine festival going on after your course. My liver made funny noises the next day. More

The day long course that we attended was more than just a cooking course. It was a great experience. you share Silvestro's home for the day, working with the other course members to produce both a lunch and later a dinner. You visit the local market and because of our particular interest in wine, we visited a wine merchant too.... More

A thrill to have you with and yes, we should certainly create a course together, as you proposed. Bread baking in a wood fired oven in a castle in Italy? Send us an email, as we'd love to discuss the project! We look forward to your next visit! More

Stepping into Silvestro's kitchen is like stepping into an authentic, colorful, picture-perfect cookbook – only better. You enter the space with the same sense of wonder and curiosity with which you would flip the first pages of a beautiful cookbook, eager to discover the basics and essence of the 'cucina salentina', yet you learn and experience more than you ever... I am so thrilled I chose to spend some time in Lecce at the Awaiting Table Cookery School. I found that the experience gave me so much more than cooking (although that was amazing)...Sylvestro and his staff showed me much of the essence of Italy and helped me to experience and feel what this lifestyle is all about. I loved... More

If you are in Lecce and like food, you should definitely sign up for a cooking class. I love the food, the ambiance and the whole feeling Silvestro has created, to end the day with a meal feels wonderful right there. Hannu Sarenström Sweden.

Our first course of 100 % Swedish students! A great pleasure, even if I couldn't follow all of the jokes. We look forward to your next visit in September! And to your book on the food and wine of Southern Italy. More

Came back for the second time and you've already planned your third! What a compliment! Consider coming for the wine course one of these times. There is a lot to appreciate about Southern Italian wine. And the study so pleasant in and of itself! See you next May! More
