The Awaiting Table's wine course, Terronia was excellent. It was small and intimate with in depth exploration of the wines of Puglia, Basilicata, Sicily and Calabria. Each tasting included 3-4 wines of the region paired with a compatible regional 3-4 course meal. Everything was delicious and lots of fun! Silvestro led us in several pasta making classes (all happily completely... More

We had a great time at the Awaiting Table. We learned quite a bit about the regional food and wine and enjoyed two delicious meals. Definitely a highlight of our trip.

Indeed----my second time attending The Awaiting Table Cookery school. Honestly, I would like to make it a yearly voyage! This time I enjoyed the castle experience---it was terrific---the "real deal". Silvestro is such a talented instructor. You don't just prepare meals, you learn about the history of foods and customs in the area. All that in an informal, family type... More

Anyone with the smallest interest in Italian food will a week after arriving to Lecce or Spongano go home again with a mind filled with new knowledges, a address book with new friends, a suitcase filled with yummy stuff and inspiration beyond comprehension! Silvestro Silvestori and his staff are super professionals who also happens to be really good people. So,... More

I have been a romano-phile for decades. My first trip to Puglia was as a "fannullone" at the Awaiting Table Cookery School. Silverstro showed them not only how but explained why the food of the Salento has become what it is today. And it is amazing. You cook, you drink, you tour, you talk, and you learn about this fascinating... More

I just spent a week at Awaiting Table cooking school at the Il Castello location in Spongano, Italy. It more than met my expectations as a travel and culinary experience. Each day, along with instructor, Silvestro Silvestori, the staff of Awaiting Table, and other students, I made pasta by hand, prepared traditional Pugliese recipes, then gathered with a group of... Really enjoyed the experience The classes were extremely well organized. Daisy is an "angel " not only dies she organise your visit but she helped me with selecting local restaurants, and found a guide for me. And I was only attending a 1/2 day class Highly recomended for any length of time you join the classes for.

We spent a week in Sepetember with Silvestro and the Awaiting Table staff at the Castle in Spongano! While the course was entitled Cooking with Herbs, it was far more than that! Silvestro has an encyclopedic knowlege of the food and wine of the Salento and is extremely adept at sharing that knowledge with his students. Each daily cooking session... More

We had a great time with Sylvestro and his team! Daisy was very attentive in helping me make arrangements before we arrived in Italy. We made pasta, chicken and some other dishes. We drank lots of wine, had great conversations and made some friends. The atmosphere is very comfortable and the class is for every skill level. Our class was... More

My time at The Awaiting Trip in Lecce, Italy, taught me how to cook tasty vegetable based meals without my usual salt laden seasonings. What I found most surprising after I returned home from eating healthy fresh meals daily at AWT, is that my usual carb and sugar cravings were absent, and I did not have the usual desire to... More

Thanks for the nice compliments and for the insider info on the weather in August, which IS warm, no question. The shoulder seasons are sought after for that reason, with winter being the best time for the food and wine, no question. We would love to have you back! Maybe to our Sicilan wine course, which will be our first... More
