Going on ten years now, The Awaiting Table Cookery school is the most praised cooking school in all Puglia. Located in the historical centre of Lecce, Italy, and during selected weeks throughout the year, in a castle an hour south of Lecce, the school has appeared in The London Times, The LA Times, Bon Appetit, The New York Times, Food and Wine and countless articles in the domestic press. The Awaiting Table Cookery school has also recently added a wine programme, as well. The owner, Silvestro Silvestori, closes his school for two month each year to bicycle Southern Italian wine country, blogging about the food, wine and culture of the sunny south of Italy.

Enjoyed 3 days with Awaiting Table in Spongano. It was a tightly compressed course. Silvestro's intense passion for the food and wine of Puglia is evident in the way he teaches not just the recipes, but the history of the region and its cooking. I had the most amazing time at the Castle with Silvestro and the staff! They made the week so delightfully special. The food and cooking was incredible - I learned a lot about Italian cuisine and a different approach to cooking. The introduction to the culture of both the Salento and greater Italy was also great. Lecce has a remarkably pure feeling of where pre christian history meets current Italian culture a La Salento. Two years ago, I was joined by three friends who spent a week at The Awaiting Table cookery school in Lecce. Last night my wife and I prepared a seafood stew that was accompanied by some crusty bread and a bottle of Italian red wine. It was amazing! My husband and I took two days of cooking classes with Silvestro at his home in Lecce. Silvestro not only taught us the technique of making pasta but also about the foods and wines of the region and how they differ from other parts of Italy. What a wonderful experience living, cooking, eating, drinking, and learning all about the Salento region of Puglia. Many thanks to Silvestro, Desi, Mauro, Anna and Simone for a terrific few days. If the Awaiting Table and this region of Italy are not on your bucket list... they should be!

This was my 3rd time to The Awaiting Table Castle Course and this time I brought 14 of my friends....Silvestro is the gracious host & owner ...his passion & knowledge of the food & wine of the region are second to none.
