Going on ten years now, The Awaiting Table Cookery school is the most praised cooking school in all Puglia. Located in the historical centre of Lecce, Italy, and during selected weeks throughout the year, in a castle an hour south of Lecce, the school has appeared in The London Times, The LA Times, Bon Appetit, The New York Times, Food and Wine and countless articles in the domestic press. The Awaiting Table Cookery school has also recently added a wine programme, as well. The owner, Silvestro Silvestori, closes his school for two month each year to bicycle Southern Italian wine country, blogging about the food, wine and culture of the sunny south of Italy.

The weeklong cooking class at the castle was a wonderful experience for learning Italian cooking, experiencing local wines and sharing ideas with new mentors and friends. I spent another week with Awaiting Table - again at the Castle in Spongano. It was another unforgetable week. This was my second time with Silvestro and his delightful staff and this time it was in Spongano at the castle. Accomodation is great and very comfortable. Four of us spent a day with Sylvestro Sivestori and his assistant Desi and assistant cook, Anna. Our amazing adventure began before we left for Lecce. Guest relations answered all our pre trip questions including suggested accommodations, sightseeing and transportation details. Take a few simple ingredients but of the best quality and let their flavours shine through is the philosophy and style of cooking that I discovered at Awaiting Table. Thank you Sylvestro for skills that I will take home and share with my friends and family. Everything was organised exceptionally well, a great experience, thanks to Sylvestro, Desi and Anna.

My friend and I signed up for a one day cooking class and had a fabulous time! Sylvestro and crew were terrific. The experience was delightful, the food was wonderful and we each went away with some cooking tips to take back home to Texas. This is very much worth it, and the city of Lecce is something to see.... More

Having gone to another cooking class earlier, this experience was light years above the first. From our meeting at the Piazza where an English speaking "Italian" greeted us to the deep discussions of cheese, wine, geography, politics, we were pleased beyond any level of expectation. If Hollywood had scripted a week in Italy staying in an Italian Castle and learning to cook southern Italian food it would not come close to the true experience.
