I visited Italy alone, in the late summer. I couldn't be happier with my choice to do the full 7 day cooking course. The classes were great, chef was very flexible about my many last minute demands and I gained so much from the recipes we learnt and memories we shared. My wife and I both took the Pizza, Focaccia & Bread Class and the Fresh Pasta, Ravioli & Pasta Sauces class this past September. Both classes were excellent and a lots of fun. While I have been staying in Lucca, I have gone to two cooking classes at Chef Paolo’s cooking school. I have taken, the main sauces and ingredients, and the fish and sea foods class. I learned how to make all sorts of incredible foods that are so easy to make at home. I can’t wait to take another class!

I attended one class with my daughter in law on the pasta sauces and another class on my own on cooking veal and risottos. Our family of four had an amazing experience making 14 different vegetable dishes and a wonderful carmellized fruit dessert.
