We took the half-day vegan course with Chef Paolo and enjoyed not only the cooking, eating and wine, but the fun and wit he brings to the experience. My parents are not vegan but interested in plant-based cooking, and we did the class to do something together over Thanksgiving. We made bruschetta, several pasta sauces, and a main dish (my... This is a MUST DO activity if you have time to spend in Lucca. What a fabulous experience cooking with other travelers and sampling local favorites. Chef Paolo is a delightful teacher and a generous host. Doing the half-day class on the Flavors of Lucca was a highlight of my trip to Italy!

Chef Paulo was a great teacher, getting everyone involved hand on from the very start. We signed up for the pasta and sauces class. There were only six of us in the class, but we made enough pasta for an army! In the end we had 11 or 12 different pasta dishes, including a chocolate dessert ravioli, and then sat... More

Anyone can enjoy this marvelous Tuscan Cooking Class!....Chef Monti does a fantastic job of teaching and entertaining at the same time. Beginners are welcomed right along with the more experienced. I have been cooking all my life (I am 72) and I learned something new from Chef with each course that we prepared. He is passionate about his work, yet... More

Chef is witty and personable, as well as an awesome teacher. We learned so much in such a short time, come hungry!!! You will leave extremely full and confident in your ability to re-create the dishes you learned!

Chef Monti is not only a great teacher, he's also hysterical. His jokes are terrible, politically incorrect and laugh-out-loud funny! The classroom is very intimate and from the first minute you are working hands-on: measuring, weighing, slicing, chopping, kneading, etc. I took the pizza, focaccia and bread class, and although I've been making bread for 20 years, I learned many... We called a few places and in the end Chef Paolo was the only cooking course we could get into but it was well worth it. He is reasonably priced and it was a wonderful day. Although we were looking for something a little more intimate originally this is still very nice. The class is at his restaurant about 10... More

I was nervous about going to a cooking class because my husband doesn't eat garlic or spicy foods. I let Chef Paolo know this before booking the seafood half-day class. He was amazing! He was very cheerful about keeping separate a little bit of each dish for my husband before adding the garlic! We made about 15 dishes and they... More

My wife is vegetarian so we did the vegetarian cooking class today with Chef Paulo. The number, range and quality of vegetarian dishes that Chef Paolo put together for us to cook was truly amazing. Chef Paolo taught us to cook all of these wonderful dishes, knife skills and entertained us with his dry wit. We had a fantastic time... More

This was a lot of fun! We took the Tuscan class, and prepared a lot of dishes. With cooking hints interspersed throughout, the class was fun and informative. Chef Paolo was entertaining and gracious, and quite generous with the wine both during the class and with our meal afterward! 😊 Even my husband, who barely knows where the kitchen is... More
