Great morning learning to cook risotto, scaloppine and carpaccio finished off with a delicious semi fredo....yum! Loved Chef Paolo's jokes even if I first heard most of them 30 years ago (the old ones are always the best!) Even more enjoyable than learning to cook the delicious food was eating it! My wife, a couple of friends and I took the half a day "Chef Paolos´Favorite Dishes". It was amazing!!!! We were able to book a private class just for the four of us. Chef Paolo offers a cooking class better than the rest! He is so funny and a knowledgable chef as well! This cooking class was a highlight of our trip to Tuscany! We took the pasta and sauces class. My husband and I live nearby and have taken most of Chef Paolo's classes. Some 2 and 3 times as whenever we have guests we will bring them to at least one class. Chef Paolo is a gem. He's really hysterical, very witty, and extremely knowledgeable.
