We (two women) took the class titled Chef Monti's Favorite Recipes. We thought we would be learning just one dish per course but to our surprise and great delight the Maestro taught us to make 4 appetizers, 3 first courses( pasta), three main dishes, and topped it with a great dessert dish that would please almost any guest. All in... More

By way of background, I have studied cooking as a VERY serious hobbyist. The other 3 people of our group were pretty serious eaters. I have made pasta before but never had as much fun making pastas and sauces. Chef Paolo's jokes really are funny- and his English is impeccable. It's a little hokey but a great time. Pass on... I have had the pleasure of taking 6 of Chef Paolo's courses over the last three years. Today, Vegetables and Soups! We were greeted by baskets and platters of the most beautiful ingredients that were used in these hands-on cooking classes. In my experience, 3 people or 12 people in a class does not change the experience. Everyone participates! Recipes... More

I spent a terrific week at Chef Paolo's cooking school. The classes were fun, interesting and Chef made everything very simple and easy to follow. He is friendly and informal with a great fund of knowledge about Italian cuisine. And we got to eat the products of our classes !! I cannot recommend the school highly enough.

We asked from the chef in advanced to have a vegan course and he prepared excellent recipes for us to do. The food making was enjoyable and informative... More

My son and I took this class, and enjoyed learning to make antipasti, pasta, roasts and biscotti. The chef keeps things lively (note - he is totally fluent in English), answers questions, and the class is definitely on the level of 'things you could make at home.' He has a sense of humor and makes sure the class has fun.... More
