I have been offering market-to-table classes since 1999 and love to share my knowledge of the wonderful produce and products in the market, and of the gastronomic and social history behind the dishes we make. It's not just about the recipes, though you get plenty of cooking and presentation tips. The classes are hands-on cooking for one person or in tiny little groups of 2, 3 or 4 at most (but up to 6 if family or friends travelling together and by the way I especially enjoy cooking with children.) It is all very relaxed, informal and enjoyable and I do my utmost to give you a memorable day and a great culinary experience. I teach all the classes personally and never run two groups at the same time! Take one class or several classes, as your time allows, and for groups of 4 or more, my customised 3 night residential classes in the countryside are a fun way to spend quality time together. I also offer shorter half day cooking classes, and an inexpensive budget class. And if your travelling partner/s don't fancy cooking, I offer a morning market food tour ending in a light lunch to introduce you to Bologna, its history and its food. I've been making fresh pasta at home and was particularly interested in filled pastas for which Bologna is justifiably famous. I arranged a day with Carmelita in order to improve my technique and my understanding. She designed a lovely menu which featured fresh pasta bundles filled with smoked mozzarella and aubergine as the pasta course. We began the day by... More

This was the highlight of my trip to Bologna! I had a wonderful time with Carmelita. She is so knowledgeable and I thoroughly enjoyed learning the tagliatelle pasta making technique unique to this region. We booked a private food tour of Bologna with Carmelita and are so glad we did. We started with coffee in town and the rest of the day included local markets, tips on local bars, where to and not to buy meat and cheese and a great lesson on real balsamic. One of the highlights was having a hand selected... More

Carmelita's apartment is nestled in the heart of Bologna's medieval center and only a few minutes walk from the main square Piazza Maggiore. Walking into her apartment, I was struck by the lovely view of a church and small square from the large picture window in her kitchen. Carmelita welcomed me warmly and spread out the cooking tools, ingredients, and... More

My daughter and I recently took the market tour + cooking class with Carmelita and enjoyed it quite a bit. I would strongly recommend including the market component if possible, as Carmelita gives quite a bit of info on not only what are the good places to buy things, but also why and what to look for when shopping for... I am a chef from Australia who has come to Italy to further my skills and increase my knowledge on the Italian cuisine. The best restaurant we went to in all of Italy was Carmelita's apartment. I'm not exaggerating. We had a lot of great food in Bologna and in other cities, but our favorite meal was the one we had after Carmelita's fascinating walking tour of the markets. It wasn't just buying ingredients and learning how to spot quality tortellini and balsamic;... More

I had a very pleasant morning learning how to make some simple yet delicious sauces and pastas. Carmelita was very friendly and explained why Italian food is the way it is. She even took me for gelato afterwards on a short walk about around the city!

Ok, not really, but not far off the mark! Our day long class with Carmelita was one of the highlights of our mother-daughter trip to Italy. We started by spending several hours in the market area both purchasing ingredients and learning about the principal food products from the area - especially parmigiano-reggiano, pastas and balsamic vinegars. She was wonderful about... More
