I have been offering market-to-table classes since 1999 and love to share my knowledge of the wonderful produce and products in the market, and of the gastronomic and social history behind the dishes we make. It's not just about the recipes, though you get plenty of cooking and presentation tips. The classes are hands-on cooking for one person or in tiny little groups of 2, 3 or 4 at most (but up to 6 if family or friends travelling together and by the way I especially enjoy cooking with children.) It is all very relaxed, informal and enjoyable and I do my utmost to give you a memorable day and a great culinary experience. I teach all the classes personally and never run two groups at the same time! Take one class or several classes, as your time allows, and for groups of 4 or more, my customised 3 night residential classes in the countryside are a fun way to spend quality time together. I also offer shorter half day cooking classes, and an inexpensive budget class. And if your travelling partner/s don't fancy cooking, I offer a morning market food tour ending in a light lunch to introduce you to Bologna, its history and its food. What makes this cooking course special is two fold. First one is introduced to the best places in Bologna to buy the best ingredients. This in itself is an education in also what to look for in terms of freshness and quality of products as well as to look out for what not to buy. The cooking courses are well... More

I spent a most memorable day touring the markets and cooking with Carmelita. This was truly a highlight in a recent trip to Italy. What I learned from Carmelita in the market tour will definitely change my cooking habits. It was a fabulous journey through the height of freshness. With fresh ingredients purchased we proceeded with cooking and of course... More

I wrote in glowing terms about my first experience with Carmelita back in April, but wanted to write again after my second experience. It was every bit as good as the first one!!! We went to some of the same shops but cooked a completely different menu. Carmelita designed a menu to suit everyone’s preferences – which was no easy... More

My husband and I were in Modena for a day. We were lucky enough to have Carmelita Caruana meet us there. She took us on a tour of the local market discussing the various specialties of the area. After the market she took take us to her favorite Acetaia on a day when they were doing the first step in... More

Thank you for your warm recommendation! I am delighted you enjoyed the tour of Modena's Albinelli market and yes, we were lucky to visit the Acetaia at wine harvest time when they were cooking down the grape juice and reducing it before placing it in the wooden barrels. I hope you are finding many ways to enjoy your authentic aged... More

We had a delightful half-day with Carmelita in Modena. It started with her giving us a very personalized tour of a Modena market. She helped us understand the various foods and their history, where they came from, when they were in season, and how we could cook with them. She was very responsive to our requests, and not only helped... More

Carmelita's class is great. My boyfriend and I really enjoyed touring the markets in Bologna and getting Carmelita's advice on how to distinguish between the good products and the bad. We returned to her butcher shop the day after the cooking lesson to purchase even more goodies. Carmelita was very flexible as we changed the menu from what she and... More

I heard about Carmelita thru my youngest step son who years before went to Bologna with his grandparents twice to attend her cooking school. He loved it and when he got home he went about making the recipes he had made at Carmelita's. So when putting our trip together with friends I reached out to Carmelita to see if she... More
