This class was a dream come true! Carmelita is like an angel sent from Heaven, to teach us all the wonders and secrets of Bologna cooking. Not only was her knowledge of the freshest and most fitting ingredients impressive, but it was beautiful how she led us around showing us all this amazing food. That of course was only half... More

As a professional chef traveling through Italy, my goal was to improve my pasta-making technique adding authenticity to the cuisine of my Italian restaurant, Necce's located in Minnesota, USA. With Carmelita's exacting standards and her eye ( and nose) for the freshest ingredients available, our goals were easily met. What I didn't expect--or even know that I lacked -- were... More

Cook Italy with Carmelita was exactly what I was imagining when we booked our day with her... and more. The shopping, sampling, cooking and eating, each aspect of Carmelita's program was eye-opening and taste-bud stimulating... and that included the wine choosing process, as well. As an Italian-American man who loves to cook, I left Bologna, thanks to Carmelita, with many... More

Recently, the day before Easter, my family and I took a wonderful cooking class with Carmelita in Bologna. Our vacation was intended to be a “culinary tour” of Italy and this class was truly one of the highlights of our trip. We looked into other classes but we specifically wanted something more informal and laid back- we were not disappointed.... More

Had a fabulous day with Carmelita, beginning with cappuccinos and a tour of the market (many tips on what to buy, where to shop, and how to identify quality products), then on to her lovely apartment for a personalized cooking lesson. It was just my husband and I, so we received very individual attention and instructions - a very different... More

My wife and I really enjoyed our day with Carmelita. Her knowledge and relationship with the vendors, city and food made the experience and weekend in Bologna unforgettable. We made some braised chicken, gnocci, and a poached pear dessert. But the food was only the beginning. As we started our day, we walked the street market and shops to gather... More

I thought Cook Italy would be a good introduction to the city since Bologna is known for food and my husband and I love to cook. This was a wonderful day. Carmelita is very warm, friendly, and knowledgeable. We toured through markets of produce, meats, cheeses. We sampled balsamic vinegars. We even visited an amazing chocolate shop. We learned how... Cooking with Carmelita was a highlight of my ten-day trip to Italy!!! Not only is she a terrific teacher/instructor of authentic Italian regional cooking, but she is a wonderful guide of Bologna! Together, you start off your day heading to the market area where you purchase the fresh ingredients to make the recipes for that day. Carmelita explains why some... More
