Rafaella leads you through the shops on market day, explaining how the various foods are produced, making sure you get samples from the guys behind the counters. I learned so much about the quality standards for Parmigiano cheese, Parma ham, Balsamic vinegar and how to make tortellini/ pasta. We spent 3 delightful days learning about the foods of Italy with our host Marcello of Bluone Cooking Schools including private tours of small, family run producers of Balsamic, Wine, Olive Oil, Proscuitto and Parmesian Cheese. My husband have been on 2 of Bluone's tours. The first in 2003 was spent in and around Bologna. Then in 2007 we went back and stayed in Le Marche. Both times we had an incredible experience.
