The "city" is a somewhat false reconstruction by Viollet-le-Duc but still beautiful nonetheless. I would suggest a rental car and visiting the city for a day or two. Very good restaurants, including Michelin 1-star. But remember, French restaurants have extremely limited and strict hours for serving. We made a day trip to the Cite, but having been to the outstanding Peyrperteuse and Aigues Mortes already we were somewhat underwhelmed. It's very well-restored but inside is overly touristy. I visited Carcassone while on a business trip to Toulouse. This medieval walled city/castle is only a short 45 minute drive from Toulouse.
