I chose between Epernay and Reims and then which houses in Reims by reviews on Tripadvisor - very useful information. We caught the TGV from Paris for the day. Sometimes you get lucky. I booked Ruinart not knowing anything about it. Only knowing that it had a good rating on TripAdvisor. We visited this wonderful house back in September 2000 and it was great - far exceeded our expectations. (We made a reservation in advance but failed to realize that we had to confirm prior to arrival - they had cancelled our reservation but since it was a quiet day for them - they accomodated us well.)
