Covers a lot of ground very thoroughly giving you all the knowledge required to produce your own hot or cold smoked food in just one day. Covers basic techniques and how to set up an inexpensive smokers for yourself, also touches on the science and food hygiene aspects. Can't fault it, I plan to do the brining and curing course... This is a great course if you're new to food smoking or have done a bit Turan can really teach you lots. He's very knowledgeable about this subject yet in able to impart his experience very lightly. We covered a lot of ground on our day and whats best managed a great smoked picnic at the end. Excellent.

Turan puts the art into artisan. He is truly passionate about his subject, he shows simple techniques that produce the most wonderful hot and cold smoked food. I attended both Turan's courses because they complement one another. Both are full days, packet with information and an opportunities to become involved with the different process. Very good course. We will be trying smoking at home as the principles were made clear with good practical guidance for the complete beginner (us).

I attended the Coldsmoking Course a while back and have been making my own smoked salmon, nuts and pates ever since. The Brining and Curing Course was just as good and well worth attending.

This is the second course presented by Turan that I have attended, he has good presentation and communication skills making a fairly complex subject interesting and easy to follow. Another terrific course from Turan, he is a really good communicator. All the information you will need to make Bacon, Ham, Chorizo, etc. etc. Even Prosciutto if you have the time and space.
