I visited Castelas in 2004 with friends, and enjoyed it immensely. I made it back again this year, and if I make it back to France I will stop by and purchase more. If you are in the Les Baux area definitely stop in, it's worth it.

I've been trying and buying olive oil in Spain, Italy and France for years but this is the one I keep coming back for. Peppery, herbs and smooth in taste. Also the olives they sell are great. Unfortunately due to a bad harvest and optically unpleasant olives there are none this year.

i was just expecting a quick talk and a tasting followed by a heavy sales pitch but in fact we got a fun tour of the factory and a proper blind tasting during which we had a chance to judge the oils and work out their individual characteristics. If you go to Provence and are anywhere near Les Baux de Provence, you should stop by CastelaS. We had a lovely short tour and explanation of the extraction process by Remy, who was charming and witty. He explained the olive trees and the entire process. Our group of 10 booked ahead and enjoyed a wonderful experience here. We had a great olive oil tasting, and learned a lot about olives and the process of making olive oil. Remy was a great teacher, full of knowledge, experience, patience and humour. An absolute must if you want to fully enjoy the Provence experience.

They do make a very nice olive oil. But the infused oils are a bit overpowering. Clerk was not very friendly and a bit stand offish. Not one to put on the top of your list b
