We loved the relaxing train ride out to the town. And Sally was there as stated to pick us up with a heart felt greeting. The drive to their home was very nice and enjoyed see the sights including the olive trees. Once at their home Guido met us and made us feel very welcome. They both are very friendly... More

My family and I spent one lovely day during our time in Italy with Sally, Guido, and Gema in Toffia. We took an easy, hour-long train ride from Rome and Sally was there to pick us up on the other end. Toffia is a very unique rural community, a medieval village built into the hillside. It was an excellent location... More

Thank you for requesting fresh pasta making in your menu for the day. Making fresh pasta by hand (without a pasta making machine) is truly the traditional way of making pasta and a dying art, so Guido enjoys teaching this skill to all who wish to learn. I am really pleased you found all the dishes "fun to make and... More

Sally and Guido are people with warm hearts and a great passion for what they do. Their love for food, the local products, recipes, the environment with the gorgeous olive groves and the medieval village Toffia and its people shows through all activities and make this holiday a fantastic unforgetable fun experience. I did a 3 night, 4 day cooking... More

My 2 sisters and I had a wonderful time cooking with Guido in his lovely home in the beautiful medieval town of Toffia, Italy. We took the train to Fara Sabina and were picked up by Sally, Guido's lovely wife. The drive to their town was breathtaking. Sally took us for a walk thru the town with a stop at... More

I am really pleased you and your sisters had a great day with us, and we would love to see you all return. The stories we exchanged over lunch really made my day. The joy of our cooking classes, for us, is not only being able to impart all of our local knowledge about seasonal foods, traditional italian recipes and... More

Sally and Guido of Convivio offer amazing cooking, wine and olive oil tours based in Toffia. Toffia is a small hilltop village in the Sabine Hills - and is a little known gem just a short trip from Rome. With Convivio, visitors have the unique opportunity to experience genuine Italian lifestyle, not just monuments. My children and I have been... More

It sounds like you have soaked up the wonderful atmosphere of our medieval hilltop village and taken home much more than a cooking class experience. The experience we offer in this little ancient village is certainly unique and not many other tourists have discovered the beautiful Sabine Hills, and all it has to offer. I am happy that we could... My husband and I completely enjoyed our day with Guido and Sally. We took the train from Rome about 45 min., and were picked up by Sally at the station. The drive to Toffia was about 20min. of winding roads and comfortable conversation. Sally was careful to introduce everyone in our small class, and put us into the capable and... More

I am really glad you enjoyed your One Day Cooking-Touring Experience with us and found it a unique and memorable experience. It sounds like you will have fun replicating the authentic italian recipes, Guido taught on the day, at home. The mini polenta cakes are also one of my favourite recipes. If you have any questions about any of the... More

As a home cook, loving Nonna and semi-retired professional, Convivio Rome provided more then expected. I met up with a long-time friend in Rome and we traveled easily by train to the magnificent town of Toffia for the three day class. We stayed in town and soaked up the country air and sunsets, the people, the history, and of course... More

I am glad you found head chef, Guido to be 'a patient teacher and an artful chef'. Guido aims to make the cooking lessons informative and interesting in a relaxed and enjoyable environment. It is a fun way to learn while absorbing the atmosphere of what is like to cook in a well-equipped Italian family home kitchen. Thank you for... More

I have just returned from my 2nd visit to Convivio Rome, my initial trip was in Sept 2012. The course (over 5 days) was as expected and I was fortunate enough to be involved in learning how to prepare and cook different things 2nd time round. There were 2 exceptions: One being making pasta, demonstrated by Lucia, I hadn't realised... More

This was an absolutely wonderful experience! We learned to make some handmade Ravioli, Saltimbocca, and a Ricotta cake. It was well taught so that I feel like I could try it at home and have success and the the class size was small enough so that you could all really get your "hands on", or in this case "hands in",... We loved every minute of our half day cooking class! Sally picked us up in the ancient square and walked us around the village (stopping at an herb garden and bay leaf tree to pick some of the freshest herbs I have ever used)!
