Our time at the market introduced us to Mexican foods, people and arts as Paco led us through the market before taking us to his home where we prepared a several course meal together. His organization for the day was excellent, his charming and engaging personality made the class informative and fun as we chopped, mixed and tasted the best... More

Tonight we will dine with Rick Bayless during his performance of Cascabel at the Lookingglass Theater in Chicago. We will tell Rick of our delightful and informative class with Paco this past May. Paco had many great things to say about Rick during our class as we expect Rick will say great things about Paco. If you haven't taken Paco's... More

Paco offers classes of 4-6 people cooking traditional Mexican cuisine in his delightful home. We did a 2-day session, in which we thoroughly enjoyed the Market Tour and then cooking the items we had bought over the course of the two days. He is very knowledgeable and fun to cook with!

Today my daughter and I, as well as my sister-in-law and niece, took the market tour and cooking class from Paco. It was fabulous! Paco took us to the market and introduced us to all his favorite vendors. We sampled jicama with lime and chili, roasted corn, prickly pears, fresh garbanzo beans, and more. Then we spent the afternoon cooking... More

My wife and I took the market tour and cooking class from Paco. The market tour was wonderful and instructive, introducing us personally to various vendors at the market as well as educating us on the numerous flavors of Mexico. After we finished our market tour and purchased the various ingredients for our menu, we all were transported to Paco's... More

Paco, with knowledge and the ability to instruct a variety of participants, prepared a complex menu, topped off with a fabulous dessert, introducing us to Mexican wines and chilies. I highly recommend this creative and aesthetically oriented cooking class. Everything we could have wished for appeared on the serving table after preparation, in a beautiful dining setting. The tour was... More

We had made prior arrangement with Paco Cardenas to take his market tour-cooking class. 6 of us assembled at the Plaza Civica at 11 a.m. Paco took us to the market with a few stops enroute (take the class and see where we stopped) - spent 2 hours in the market where Paco introduced us to different vegetables, including the... We (5 visitors to SMA) spent most of the day with Paco, starting with an exciting tour through the market, tasting such delights as zapotes and jugo verde and experiencing the obvious pride Paco carries for the food of his native land. Paco is a successful, talented artist and interacts with the little old ladies of the market with respect... More

I don't want to give away all of the many secrets of this amazing day with Paco so it will be hard to express how magical and informative this day was. But I will say: it is so very much more than an excellent cooking class. More than an immersion in the market. More than a look behind the kitchen... More

I enjoy taking cooking classes when I travel. Of all I've taken, in SMA and elsewhere and at any price, Paco Cardenas' cooking class was the best. He had everything just right. We 3 friends (1 accomplished cook, 1 okay cook, and 1 hardly-cooks-at-all cook plus 2 others) met at the Plaza Civica next to the Allende equestrian statue -... More
