We were fortunate to select Marilau's cooking school for our first experience with the preparation of central Mexican cuisine. The recipes were super, and Marilau made the experience fun as well. We did the bulk of the preparation in her very comfortable kitchen. She provided many key tips on what to do and what not to do. For example never... More

My husband and I were delighted to find this cooking school right in the neighborhood where we were staying. We had arranged our menu ahead of time via e-mail and got exactly what we asked for... Sopa de Tortilla, Rajas de Chile Poblano con crema and Pescado Veracruzana. Maria's English is excellent and her teaching style easy to follow and... More

I took MariLau's course twice over the course of 2 years. Each time the course was extremely helpful in learning Mexican cooking techniques. The recipes are good, especially the Aztec tamal dish, but what is more important is that she teaches real Mexican cooking and the techniques used by home Mexican cooks. Invaluable lessons for those who really want to... More

I took two different classes from Maria during my five day visit to San Miguel. Both excellent. The classes are hands-on, so you learn by doing. I highly recommend the salsas (sauces) class if you haven't done a lot of Mexican cooking before. You'll get hands-on experience working with dried and fresh chiles, and you'll have a great array of... More

I took two separate classes from MariLau and loved every minute! If you are serious about learning about authentic Mexican cooking contact her. I took the Mole and Pepin courses and have been able to replicate both on return to Canada. We will be returning to San Miguel next year and I will be sure to learn more. More

After spending 2 days in the kitchen with Maria, I fell in love with the food of central Mexico. I learned to prepare tomatillo soup with chocoyotes (little masa dumplings), basic sauces made with guajillo, pasilla, and chipotle chiles, the proper way to make Mexican rice, and an amazing pepian rojo dish made with toasted pumpkin and sesame seeds, which... Maria is an excellent teacher with a fine command of English (as well as Spanish). Her enthusiasm and knowledge about the cuisine of Mexico are outstanding. I speak from my own experience as a cooking teacher of more than 30 years when I praise her classes when I recommend her classes to anyone with an interest in cooking! More

My wife and I returned to San Miguel de Allende for the second time in February of 2012. We wanted to take a cooking class while we were in SMA, so we checked out Marilau Mexican Ancestry Cooking School on the internet. We signed up on line in advance of our trip and chose a "hands on class" -- which... More

I took the Salsa class on the recommendation of a friend of mine, and it was everything he said it would be and more! Marilau, is a great teacher and a professional, who shows you her authentic recipes while providing you with their historical and geographical context. There is a great deal to take in, but she leaves time to... More

I took my parents to Marilau's cooking school to learn how to make cochinita pibil, arroz envuelto en hoja de plátano and nopales con chorizo. It was a fun experience. We got to learn how to cook some famous Mexican dishes the right way and then eat the delicious results! More
