As a Mexican native, I inherited my Mexican cuisine knowledge from my previous generations. And my passion too! From my earliest years, I watched my mother, my aunts and grandparents in the kitchen, so I invite you to join me in tranquility to take our aprons and spoons, to use the very fresh ingredients of our Mexican Cuisine, and recreate together those delicious dishes. I love sharing my knowledge about one of the most varied and delicious cuisines in the world. I take pride in customizing my classes to suit the needs of all students -that don't have to stick to a fix classes program calendar- in my cozy kitchen with its antique Mexican molcajetes and metates. Just contact us to arrange your own hands-on class with a maximum of 4 students per class to insure individualized attention to each. Classes are from Monday to Friday, starting at 10:00 am. A special schedule can be arranged for private groups. A minimum number students apply for each class. We offer open custom classes for short stay students and professional intensive courses. « less

The food we learned to cook from Marilau was easy and quite tasty using the recipes she provided. We were disappointed that we couldn't have our leftovers since we paid for the class (sort of an unusual business habit) and it took some time to warm up to class, but overall a good experience. She usually doesn't accept American dollars,... More

I took the 3-day Chiles class with Marilau and had a wonderful time. I learned the best techniques on how to properly use dry and fresh chiles to make the most delicious salsas, moles, adobos and pipianes. Marilau is a rare combination of an expert culinary master and gifted teacher. I loved my classes and will certainly return for additional... More

I took 3 classes with Marilau during my trip to San Miguel. It was an honor to get to cook with her. I learned SO MUCH!!! Yes, I just screamed that. If you really want to learn how to make true and delicious Mexican cuisine, please do not go to any other school. She is the real deal. She teaches... More

My companion and I had her undivided attention for a four hour class on making sauces - aka salsa in Spanish (not pico de gallo - the diced tomatoes and onions). She's an intelligent, knowledgeable and pleasant person to spend time learning from. We've scheduled one more class with her before we leave town, but it will be a miracle... More

First, apologies to Mari … I have had the flu since returning from Mexico, so it has taken me a couple of weeks to write this :( Now on to the good stuff. My husband and I had the pleasure of taking cooking classes with Mari during our recent stay in San Miguel. It is difficult to find the words... More

This review is long overdue! My husband and I completed a 3 day diploma class with Marilau in early April while on holiday in San Miguel. Marilau’s compassion for preserving Mexican ancestry through cooking was evident from the moment we met her. This is a hands-on intense way of learning, and we enjoyed every minute of class. It was enlightening... More

On my mother's recommendation, my wife and I took a class with Maria. We did three salsas (traditional sauces), Chicken Tinga and a black bean soup. As all the other reviewers have said, the results were just delicious. My one-year-old daughter loved the Tinga (as did I). You could really discern the rich, traditional flavors - not like a Tex... This course is intense, Maria works from the moment you get there until you leave. The work is worth it; every dish is superb. I usually can easily decide which of several dishes I prefer, but could not; they''re all good.

I was lucky enough to attend Marilau's class on making authentic Mexican adobes and pipians- two sauces I could have eaten and never even thought about, let alone learn how to make. Marilau is not just a cooking instructor, but offers a deep understanding of Mexican culture and food along with proper preparation technique. I enjoyed the small class size,... More

During a recent trip to San Miguel, four family members and I had the pleasure of taking a small, hands-on cooking class with Marilau in her cozy kitchen. We sipped refreshing hibiscus tea as she taught us many basics of authentic Mexican cooking. She is not only professional and knowledgeable, but she is also delightful and entertaining. Although most of... More
