Oscar Carrizosa was the perfect class for us. He met the challenge of an all-vegetarian meal with several suggestions. We picked out our menu and then went to the market to buy the ingredients. This is Neuveau Oaxacan cooking. Oscar suggests many dishes, and you get to choose appetizers, soup, salad, main course, dessert, drinks. First you go with Oscar to the local mercado to buy fresh local ingredients. Oscar intros each dish and demos techniques, but you do the actual preparation. Food is half of the reason one should visit Oaxaca with it's abundance and diversity of flavors. Casa Crespo took us behind the scenes, allowing us to feel like a local for 4 hours. I took the class after spending 17 days in Oaxaca, eating several times over at some of the best restaurants in town. It was exciting to make some of these dishes myself under the excellent guidance of Oscar our teacher, and to make some dishes that hadn't been offered at the restaurants.
