The best time to see is at Night when it lights, you should see it from the beach. Awesome, loved it.
You can have a good view, upto the shore temple... It is not too difficult to climb, but avoid crowd.
Seems to have a good view and a lot fo folks talked about going up it to catch the sunrise, tho I didt get up myself
The lighthouse is a good spot to check out all the monuments at a single glance. At first it was very exciting (little scary though) to reach the top and the view from the top of the lighthouse was awesome. You can see the beach, shore temple, five rathas, Mahishasuramardini cave, back waters and more.

The whole of Mahabalipuram comprises of photogenic spots. All of these places are also quite close to each other, so very little travel involved.
There are some nice rock formations before you can enter it and around the place are many shops with stonecarvings, and some of them are beautiful. Don't forget to bring your repellent
