We just returned from a week on St. Thomas,and our favorite restaurant was Room with a View at Bluebeards Castle. The restaurant itself is beautifully decorated, and all tables overlook the harbor and mountains-breathtaking! The Carambola Hotel was the second hotel of our week in St Croix. We stayed first at the Hibiscus Hotel (see review). We spent one week in St Croix, 4 nights at the Hibiscus and 3 nights at the Carambola (see hotel for review). First I'd like to say that we had a wonderful time on this beautiful small Island, people are nice and courteous, beaches are fantastic and rum is good.
